- Add the chopped apples to a saucepan with 2–3 tablespoons of water.
- Cover and cook over medium-low heat for 15–20 minutes, or until the apples are soft.
- Stir in the maple syrup and Ceylon cinnamon.
- Mash with a potato masher for a chunky texture or blend until smooth.
- Allow to cool before measuring out ½ cup for the bread.
- Preheat your oven to 350°F (175°C).
- Lightly grease or line a loaf pan with parchment paper.
- Grate the zucchini and firmly squeeze out as much excess moisture as possible using a clean kitchen towel or cheesecloth.
- In a large mixing bowl, whisk together:
- Almond flour
- Cacao powder
- Baking powder
- Baking soda
- Celtic salt
- Ceylon cinnamon
- Ground cloves
- Ground nutmeg
- In a separate bowl, whisk together:
- Eggs
- Maple syrup
- Homemade applesauce
- Avocado oil
- Coconut sugar
- Mix until smooth and well combined.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Fold in the grated zucchini and mix until evenly incorporated. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Smooth the top with a spatula.
- Bake for 1 hour to 1 hour 30 minutes, or until a toothpick inserted into the center comes out mostly clean with just a few moist crumbs attached.
- If the top begins browning too quickly, loosely tent with aluminum foil during the last 20–30 minutes.
- Allow the bread to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
