  • 4 organic apples peeled, cored, and chopped
  • 2 tablespoons pure maple syrup
  • 1 teaspoon Ceylon cinnamon
Chocolate Zucchini Bread
  • cups grated zucchini excess liquid squeezed out
  • ½ cup Noomi Health's Homemade Applesauce
  • cup avocado oil
  • ¼ cup pure maple syrup
  • 2 large eggs
  • 1 cup coconut sugar or sweetener of your choice
  • cups almond flour or flour of your choice
  • ½ cup cacao powder
  • ½ teaspoon Celtic salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon Ceylon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

Method
 

Directions
    Step 1: Make the Homemade Applesauce
    1. Add the chopped apples to a saucepan with 2–3 tablespoons of water.
    2. Cover and cook over medium-low heat for 15–20 minutes, or until the apples are soft.
    3. Stir in the maple syrup and Ceylon cinnamon.
    4. Mash with a potato masher for a chunky texture or blend until smooth.
    5. Allow to cool before measuring out ½ cup for the bread.
    Step 2: Prepare the Bread
    1. Preheat your oven to 350°F (175°C).
    2. Lightly grease or line a loaf pan with parchment paper.
    3. Grate the zucchini and firmly squeeze out as much excess moisture as possible using a clean kitchen towel or cheesecloth.
    Step 3: Mix the Dry Ingredients
    1. In a large mixing bowl, whisk together:

    3. Cacao powder
    4. Baking powder
    5. Baking soda
    6. Celtic salt
    7. Ceylon cinnamon
    8. Ground cloves
    9. Ground nutmeg
    Step 4: Mix the Wet Ingredients
    1. In a separate bowl, whisk together:
    2. Eggs
    3. Maple syrup
    4. Homemade applesauce
    5. Avocado oil
    6. Coconut sugar
    7. Mix until smooth and well combined.
    Step 5: Combine
    1. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
    2. Fold in the grated zucchini and mix until evenly incorporated. Do not overmix.
    Step 6: Bake
    1. Pour the batter into the prepared loaf pan.
    2. Smooth the top with a spatula.
    3. Bake for 1 hour to 1 hour 30 minutes, or until a toothpick inserted into the center comes out mostly clean with just a few moist crumbs attached.
    4. If the top begins browning too quickly, loosely tent with aluminum foil during the last 20–30 minutes.
    Step 7: Cool
    1. Allow the bread to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.

    Notes

    Noomi Health Tips For an extra chocolatey loaf, fold in ½ cup dark chocolate chips before baking. Sprinkle a pinch of Celtic salt on top just before baking to enhance the chocolate flavor. Store in an airtight container for up to 4 days at room temperature or 1 week in the refrigerator. Freeze individual slices for up to 3 months for a quick, wholesome snack.
