Homemade Marshmallows

Ingredients
  

  • 3 Tablespoon Unflavored gelatin powder
  • 1 Cup Cold water Divide into 1/2 cup portions
  • 1 1/2 Cup Pure maple syrup
  • 1 Teaspoon Vanilla
  • 1/4 Cup Arrowroot powder For dusting

Equipment

  • Hand Mixer
  • Large Mixing Bowl
  • Saucepan
  • Candy Thermometer You will need to heat the maple syrup to 240°F
  • Knife
  • Rubber spatula
  • Baking Pan 8x8 inches for JUMBO size or 9x13 inches for regular size marshmellows
  • Parchment paper

Method
 

  1. 1. Prepare the gelatin: In a large bowl, pour 1/2 cup water and sprinkle the gelatin evenly. Let the gelatin sit for 10 minutes.
  2. 2. Prepare the syrup: In a small saucepan, add the other 1/2 cup of water and maple syrup. Heat the mixture over medium heat until it comes to a boil. Increase temperature to medium-high. Stir the mixture until it reaches 240°F on your candy thermometer.
  3. 3. Combine Gelatin and Syrup: Pour the hot mixture over the gelatin. Use mixture and beat on high speed for 10 minutes or until mixture becomes thick and has tripled in size.
  4. 4. Add Vanilla: Mix in vanilla extract right before mixture is done.
  5. 5. Pan: Line your pan with parchment paper. Using a spatula pour the marshmallow mixture into the pan, spread mixture evenly.
  6. 6. Set: Allow for the marshmallows to set at room temperature for 4-6 hours.
  7. 7. Cut and Dust: Once the marshmallows have set. Cut them into squares. Dust marshmallows with 1/4 cup of arrow root powder.
